Virginia Rainey knows food. She was a former food writer for the Salt Lake Tribune, City Weekly, Park City Magazine, and Sunset Magazine. We picked her brain about Salt Lake’s food scene, and here’s what she had to say:
What are your favorite restaurants in SLC and why?
"This is a tough one, as we have so many great options, but here goes: The Copper Onion, HSL, and Oquirrh. Each is a carefully crafted reflection of its owners’ seasoned taste and style. They source the best ingredients, their menus change with the seasons, and they never simply rest on their laurels. You can feel the creativity, care, and a certain fun 'buzz' the minute you walk through the doors."
What’s the hardest part about food writing?
"Conveying the tastes and other sensory qualities of foods and experiences without resorting to clichés. Also, you have to know what you’re talking about. It takes time to read, experience, and study. Check and double-check your facts. It’s never fun or easy to criticize; if you do, you’d better be sure it’s warranted."
What’s your favorite part about Utah’s food scene?
"The people who are making it happen, who really care about doing it right. We have dedicated restaurateurs, farmers, cheesemakers, distillers, brewers, wine brokers, and educators from everywhere doing extraordinary things. There’s so much good energy despite the challenges of the past few years. And finally, we have a food community that looks after and supports one another."
